Default A simple "un-delete" proves very difficult

I had a folder on my iPod which contained hidden files. I foolishly assumed it was empty. As I hit the delete button, I was instantly alerted when it said "deleting 56Gb". I hit cancel asap and saved most of the files, however some critical files were deleted. I put my iPod in Disk Mode right away and didn't write a thing to it. One would assume the files are still there.

I have tried now four different recovery software packages, including Recover My Files, and they have all reported all sorts of junk, just not the three files I want. One (ZAR) was able to find about 30% of the files.

How can this be!? Nothing has been written to the drive, how could I have lost 70% of the data like this after a simple Windows delete action (was running for <1 second)

How can I recover this information, what software do I use?

(Note: FYI these aren't files related to iPod_Control, they are personal files I had hidden, it is absolutely unrelated form the iPod itself)
